The oldest and most visible part of Frost Valley YMCA is the 100-year-old Forstmann Castle (yes, a castle!) overlooking the Neversink River valley and the main road leading to Frost Valley. It’s available for tours, activities and even overnight lodging. Go ahead and take in the stonework (all from local fields), the massive fireplace, the intricate woodwork and the parquet floors, but trust us – don’t miss the view from its observatory!

take your family higher

on’t just visit the Catskills. Become a part of them! Take your family back to nature – or as Frost Valley YMCA staff say, “Disconnect to reconnect.” Climb up into the Catskills’ highest peaks for a memorable stay at Frost Valley, where everyone – and we mean EVERYone – can find something to do. Open year-round, Frost Valley is unlike any YMCA you’ve visited: Relax inside a cabin or platform

Ice skate, fish and swim in manmade Lake Cole or splash in the crystal-clear waters of a Catskills creek. Hike, cross-country ski and snowshoe upwards of 35 miles of trails – across rope bridges, along scenic mountain ridges, even to a secluded waterfall! Learn about wildlife from trained staff and scientists, some of whom fell in love with the outdoors because of their first trip to Frost Valley! Scratch that arts and crafts itch inside a room tracing the history of art from antiquity to modern times. Eat within the Thomas Dining Hall, three interconnected dining rooms where you’ll find no evidence of candy or soda – just healthy, nutritious, filling meals geared to appetites of all ages. Then gather back at the family cabin for a campfire (with precut wood already supplied), a singalong, or just hanging out. Believe it or not, you can do all this without sacrificing modern conveniences like WiFi, heated rooms and handicapped-accessible facilities. Indeed, Frost Valley is all about exceeding expectations – including within yourself. Climb walls, visit waterfalls, stay in rustic cabins or a handsomely appointed castle – whatever you choose, Frost Valley YMCA offers unique, unforgettable experiences for the entire family. Frost Valley shares a special bond with the Tokyo YMCA, and the founders of that relationship – the Honma family – decorated the Friendship House at Frost Valley (left), a six-bedroom Japanesestyle camp lodge featuring an authentic Japanese Tatami room, a handmade rock garden and a traditional ofuro bath.

here may be irony but no mystery as to why Albanianborn Baco Vulaj is so wellregarded for his Northern Italian restaurant, Piccolo Paese. “I don’t know anything about Albanian cuisine,” he laughs. But he knows a great deal about Italian dishes, thanks to four years spent in Italy and to a lifetime working in restaurants throughout the New York metropolitan region. His love of cooking found life in the steamy, aromatic kitchens of destinations like Felidia, Piccolo Mondo and more. In the process, Baco developed a taste for the food of northern Italy. “Northern Italian cuisine is a little more refined as compared to central or southern Italy,” he explains. 12

He brought both that taste and skills to Liberty, NY in 1998, partnering with a friend to transform a former Howard Johnson’s into Piccolo Paese. Baco is now the sole owner, but he’s still the chef, working with a staff of five to create memorable lunches and dinners for palates appreciative of a fine meal. “I like to be hands-on, whether it’s the front door or the back door,” he says. “In this business, I think that’s important.” Equally important to him is the customer’s experience. “In this type of atmosphere,” he notes, gesturing to the elegantly appointed dining room, “my job is to impress and make people happy.” Six nights and four days every week, he does exactly that, be it with his homemade pasta and sauce, his generous wine and spirits selection, or a specials menu that he creates daily. The specials reflect what’s caught his fancy from local and downstate purveyors of fresh food. “I’m down in the city almost every day,” he says, bringing back top-quality Angus beef, fresh-caught fish, and delectable fruits and vegetables.

Oysters Rockefeller, grilled calamari salad, homemade ravioli and delicious desserts all become memorable dishes at Piccolo Paese in Liberty, NY. Credit chef and owner Baco Vulaj, whose culinary skills are unmatched in the region. Graciously appointed inside and out, the restaurant itself is a place to savor, where guests can await unforgettable meals.

A well-stocked bar offers an inviting place to relax, as does the elegant yet casual dining room. Once you cap off dinner with a freshly-made dessert, don’t pass over the opportunity to take home a jar of Baco’s famous marinara sauce.

Complementing Baco’s unique creations is a full bar with a talented bartender, who can mix drinks to perfectly pair with any meal. And when guests go home, they can take with them a jar of Baco’s legendary marinara sauce. “I can it in my house,” he nods. Baco also enjoys sharing his culinary knowledge with his patrons. He has presented hands-on workshops which reveal the secrets of his kitchen magic in a friendly, casual atmosphere, where the participants enjoy the results right on the spot while indulging in fabulous homemade ravioli and classic Caesar’s salad, among other dishes. (There are plans to present more of these educational events in the future.) Indeed, Piccolo Paese feels as if one has stepped into Baco’s own home, albeit treated to a meal and service befitting an honored guest. “Food is so personal,” he shares. “I enjoy making people happy – when you create something and you see a smile.” egin your meal with appetizers such as imported burrata mozzarella with roasted peppers, seafood salad drizzled in lemon oil, carpaccio (raw filet mignon) or bresaola (air-dried beef) with shaved parmesan and truffle oil. chicken, beef, fish and vegetarian selections. Baco’s perfectly prepared veal chops are enormously popular – breaded, topped with mozzarella in a brown sauce, or grilled with onions, mushrooms and prosciutto. His homemade pasta – from ravioli to fettucini – is not to be missed either. Special requests are gladly accepted, including for gluten-free and vegan needs. A selection of fine wines, beer and liquors can be found alone or with a meal, the house specialty being a variety of memorable martinis (coconut, lemonchello, double espresso, pomegranate, black cherry). A selection of tableside desserts – prepared fresh every day – round out every meal. Catering is available, as is a private party room seating up to 75. The full list of menu items and offerings can be found on Piccolo Paese’s website.

ake the whole gang to a one-of-a-kind experience later this winter! The National Junior College Athletic Association (NJCAA) is once again bringing its annual Division III Men’s Basketball National Championship to SUNY Sullivan’s campus in Loch Sheldrake, NY, and anyone who loves a good game is invited. Spend an hour, a day or a whole weekend March 1214 in the Paul Gerry Fieldhouse, which will host eight top-ranked men’s basketball teams from colleges around the country. SUNY Sullivan is where NY Knicks player Cleanthony Early got his start, and considering the long-running winning streak of the Sullivan Generals (who are again on their way to playing in the Championship), you may just see another future NBA draftee in action! Hall of Fame honorees will also be inducted during the Championship (names will be announced in February). SUNY Sullivan is excited to welcome you and your family to the Catskills region this March, and for more information – including where to stay and eat – check out www.championships-sullivan.com. Tickets go on sale February 1 and can be obtained by calling 845-434-5750, ext. 4294. P.S. Mark your calendar for 2016, as well, when the Championship tournament will expand to 12 teams, with a fourth day of events!

These stunning images of bald eagles were taken right here in the Upper Delaware River Valley by talented local photographer Stephen Davis, on behalf of the Delaware Highlands Conservancy, which operates an eagle-watching and volunteer effort every winter.

sk anyone who lives or works near the Delaware River in Sullivan County’s Catskills, and they’ll tell you the sheer exhilaration of watching bald eagles flying, feeding and nesting throughout the year. But in the depths of winter – January to March – close to 200 more eagles swoop down from the even colder northern climes to join their year-round brethren, as food can be more easily found here. Due to the ever-increasing popularity of our “snowbirds,” the Delaware Highlands Conservancy

gathers and trains volunteers to conduct eagle-watching tours and staff eagle-watching sites in Narrowsburg, Minisink Ford, Barryville, Forestburgh, Rio and other locations close to open water. Tours are scheduled for every Saturday from now through Valentine’s Day, starting at 1 p.m. each day. Most set off from the Winter Field Office in Lackawaxen, PA. But be sure to bring the family to the PPL Environmental Learning Center on Lake Wallenpaupack in Hawley, PA on Sat., Jan. 24 for Eagle Day, which is free and will feature a presentation by the Delaware Valley Raptor Center.
